Tartare is raw fish shaped into small cubes combined with various ingredients to create a rich, flavorful dish. The ingredients vary from region to region but typically include vegetables like onions, garlic, ginger or shallots, herbs (dill, cilantro depending on the region), vinegar or lime or lemon juice, oil and spices.
Ingredients (Serves 4)
- 225 grams sushi-grade salmon, skin removed, finely diced
- 1 tablespoon shallot, finely minced
- 1 tablespoon capers, drained and chopped
- 1 tablespoon fresh chives, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon lemon juice (freshly squeezed)
- 1 teaspoon lemon zest
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon soy sauce
- Salt and freshly ground black pepper, to taste
- Avocado slices or diced avocado (as a cream or optional, for serving)
- Crackers, toasted baguette slices, or cucumber slices (for serving)
Instructions
Prepare the Salmon: Place the finely diced salmon in a mixing bowl. Ensure the salmon is very fresh and sushi-grade since it will be eaten raw.
Add Aromatics and Seasonings: Add the minced shallot, chopped capers, chives, and dill to the salmon. Gently mix to combine.
Make the Dressing: In a small bowl, whisk together the lemon juice, lemon zest, olive oil, Dijon mustard, and soy sauce. Adjust the seasoning with salt and freshly ground black pepper to taste.
Combine and Toss: Pour the dressing over the salmon mixture and gently toss to coat all the ingredients evenly. Be careful not to overmix; you want the tartare to retain some texture.
Chill: Cover the bowl with plastic wrap and refrigerate the salmon tartare for about 10–15 minutes to allow the flavors to meld together. This step is optional but recommended for the best flavor.
Serve: To serve, you can use a ring mold to shape the salmon tartare into neat rounds on individual plates. Alternatively, spoon the tartare onto a plate and garnish with avocado slices or diced avocado for a creamy contrast.
Garnish and Enjoy: Sprinkle a little extra chive and dill on top for a fresh finish. Serve immediately with crackers, toasted baguette slices, or cucumber slices on the side.
Tips for Making Perfect Salmon Tartare
Use Fresh, High-Quality Salmon: Since the fish is eaten raw, using fresh, sushi-grade salmon is crucial for both flavor and safety.
Chill the Salmon Before Dicing: For easier slicing and a better texture, chill the salmon in the freezer for about 15 minutes before dicing.
Add Texture: Consider adding diced cucumber, radish, or avocado for a different texture. This adds a delightful crunch and freshness to the dish.
Balance the Flavors: Adjust the acidity, salt, and heat according to your taste. You can add a pinch of chili flakes or a dash of hot sauce for a little kick.
Enjoy your salmon tartare as a light appetizer or a sophisticated main course!
