
Ingredients
– 1 kg beef (preferably shoulder or chuck), cut into small pieces like cubes
– 1/2 cup olive oil
– 2 large onions, finely chopped
– 3 cloves garlic, finely chopped
– 2 carrots, sliced into very small pieces
– 1 can (400 g) of crushed tomatoes
– 2 tablespoons tomato paste
– 1 cup red wine
– 2 cups of beef broth
– 1 bay leaf
– 1 cinnamon stick
– 4-5 allspice berries
– Salt and pepper
Instructions
1. In a large pot, heat the olive oil over medium-high heat. Add the beef and brown it well on all sides. Remove the meat from the pot and set it aside.
2. In the same pot, add the onions and sauté until they soften and become translucent, about 5 minutes. Add the garlic and carrot and sauté for another 2-3 minutes.
3. Return the beef to the pot and add the tomato paste. Stir well and let it sauté for 1-2 minutes.
4. Add the wine and let it boil for a few minutes until it is reduced by half.
5. Add the crushed tomatoes, broth, bay leaf, cinnamon stick, allspice, salt, pepper, and sugar. Stir well.
6. Reduce the heat, cover the pot, and let the stew simmer for 1.5-2 hours or until the meat is tender and the sauce has thickened. Stir occasionally and add water if necessary.
7. Remove the bay leaf and cinnamon stick before serving.
