This recipe combines fresh greens, creamy goat cheese, citrus, and a light vinaigrette for a refreshing and flavorful dish.
Ingredients:
For the Salad:
- 4 cups mixed salad greens (such as arugula, spinach, or baby kale)
- 150 gram goat cheese (crumbled or in small slices)
- 1 orange (peeled and segmented)
- 1/4 cup walnuts (toasted and roughly chopped)
- 1/2 red onion (thinly sliced)
- 1/4 cup dried cranberries or pomegranate seeds (for a pop of sweetness)
- 1 avocado (sliced)
For the Honey Citrus Vinaigrette:
- 2 tbsp fresh lemon juice
- 2 tbsp fresh orange juice
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1/4 cup extra virgin olive oil
- Salt and pepper, for seasoning
Instructions:
- Toast the walnuts:
In a small pan over medium heat, toast the walnuts for about 3-4 minutes, stirring occasionally, until they become fragrant. Be careful not to burn them. Once toasted, set aside to cool. - Prepare the vinaigrette:
In a small bowl, whisk together the lemon juice, orange juice, honey, and Dijon mustard. Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing. Season with salt and pepper to taste. Set aside. - Assemble the salad:
In a large salad bowl, add the mixed greens. Top with orange segments, sliced red onion, toasted walnuts, dried cranberries or pomegranate seeds, and avocado slices. Gently crumble or place slices of goat cheese over the top. - Dress the salad:
Just before serving, drizzle the honey citrus vinaigrette over the salad. Toss gently to combine, ensuring everything is coated evenly. - Serve:
Plate the salad and enjoy it as a light, refreshing meal or side dish. The creamy goat cheese, fresh citrus, and tangy vinaigrette make for a harmonious balance of flavors. Enjoy!
